Aloo Tikka

Aloo Tikka is a very popular Indian street food snack. It is simple to make and so nice to eat. I have added a very small amount of chilli – but you can make it as spicy as you like. 

Ingredients​​

  • 4 medium sized potatoes boiled and mashed (dry mash do not add milk or butter)

  • ½ tsp coriander powder

  • ½ tsp cumin powder

  • 1 tsp of garlic/ginger paste

  • Pinch of chilli powder

  • 5 sprigs of fresh coriander

  • ½ red onion

  • Salt and pepper to taste

  • 1 egg whisked with 1tblsp of water

  • 3 tblsp oil

 

For a cooling dip

  • 4 tblsp Natural yoghurt

  • ¼ cucumber

  • Salt and pepper to taste

What do we need?

  • Sharp knife

  • Chopping board

  • Scissors

  • Cup

  • Teaspoon

  • Tablespoon

  • Fork

  • Two small bowls

  • Large bowl

  • Frying pan

  • Fish slice

It's good to put your potatoes and onion patties in the fridge for 20mins before cooking, if you have time.

What do we do?

  • Cut the onion into small pieces. The easiest way is to put half an onion flat side down on the chopping board. Cut from the root outwards (keeping the root intact) the cut across the onion the other way.

  • Cut the coriander by putting the leaves and stalks into the cup and use the scissors to chop until it is in small pieces

  • Put the mash potato, onion and coriander in the large bowl

  • Add the spices and garlic/ ginger paste

  • Add salt and pepper

  • Get your hands into the bowl and mix all of the ingredients together (make sure you wash your hands after as the chilli powder will hurt if you rub your eyes)

  • Make the Mixture into golf ball size pieces

  • Break the egg into a small bowl and whisk it up with 1tblsp of water

  • Put some oil in the frying pan.

  • Flatten the golf ball pieces into patties, dip in whisked egg and add to the pan. You can cook up to four at a time. Cook for 3 mins on each side.

  • To prepare the dip put the yoghurt into the other small bowl

  • Cut the cucumber in half vertically. 

  • Scoop out the watery seeds

  • Cut again vertically 

  • Then chop into small pieces

  • Add to the yoghurt, stir and season with salt and pepper
