

Apple and Apricot Flapjacks
Gooey and chewy flapjacks are a favourite in our house. In this recipe I have added some fruit and seeds, so you could argue that a piece of flapjack is one of your five a day!

130g Porridge Oats

65g Butter, softened

65g Light Brown Sugar

2 Tbsp Golden Syrup

½ Apple
-
6 Dried Apricots
-
25g Sunflower Seeds
What do we need?

Large Mixing Bowl

Weighing Scales

Tablespoon

Small Baking tray

Greaseproof paper

If you are not keen on apricots you could change them to raisins.
What do we do?

Put the oven onto 200c.

Cut a piece of greaseproof paper a little bigger than your baking tray. It should cover the bottom and go up the sides. You can use a little extra butter to rub on the tin before you stick the paper in.

Cut the apple into pieces around the core using the sharp knife. Stand the apple up on the board and cut down one side of the apple by the side of the core. Then lay the apple flat and cut down each side of the core and then turn the apple and cut the last side of the core.

You will have four pieces of apple. Cut each piece into slices and then cut each slice into little pieces.

Cut the apricots into small pieces with the table knife.

Put the sugar and butter into the bowl and stir well until they are all mixed together.

Add the syrup and stir again.

Add the oats, seeds and fruit and stir really well so that they are all covered in the butter and sugar mixture.

Tip the mixture out into the baking tray. Use your spoon to press the mixture down so the oat mixture all pushes in tightly together.

Put the tray of flapjacks in the oven. It will need cooking for 15 minutes and should be taking out of the oven when it is golden brown.

Leave the flapjacks to cool completely before removing them from the tray and cutting into pieces.
