

Apple and seasonal fruit fool
A fool for desert is a nice light way to finish a meal. It is basically whipped cream and yoghurt mixed together with fruit. It is perfect for anytime of the year as you can just add any fruit that is in season.
Ingredients​​ (serves four)

150ml Whipping Cream

100ml Greek Yoghurt

1 Tbsp Icing Sugar

2 apples peeled, cored and sliced

125g Blackberries or Strawberries

2 Tbsp Honey
What do we need?

Soft fruit works best as the second fruit. You could use frozen fruit, but do not add the liquid from frozen fruit.
What do we do?

Peel the apple and cut into four around the core.

Thinly slice the apple and cut the slices into smaller pieces.

Place the apple pieces and honey into the saucepan.

Cook over a medium heat for 3-4 minutes and stir often.

Put the cream into the large bowl and start whisking.

Put the blackberries or strawberries in the medium bowl and start breaking them up with a fork.

Remove the apples from the heat, out into a small bowl and cool down quickly.

Once the cream is firm, add the yoghurt and blackberries and stir gently to combine.

Divide the apple mixture between the four glasses.

Spoon in the blackberry cream mixture.

Chill in the fridge for 1 hour before serving.
