

Banana Cake
This Banana Cake is a favourite in our house and gets made quite a lot. This recipe uses 3 brown bananas but you can make it with any number of bananas you have. The rule is 2 oz of flour/sugar/butter and one egg per banana.

If you are using chocolate make sure you get it on top of the cake as soon as it comes out of the oven
Ingredients​

3 over ripe bananas

6oz/ 175g Self Raising Flour

6oz/ 175g Brown sugar
-
6oz/ 175g Butter
-
3 eggs
-
10 cubes of Chocolate (optional)

What do we need?

Weighing scales
-
Tablespoon
-
Fork
-
Mixer or Wooden Spoon
-
Large Mixing Bowl
-
Small Mixing Bowl
-
6 inch round cake tin or a loaf tin
-
Greaseproof paper
What do we do?
-
Turn the oven on 180oC or Gas mark 3/4
-
Grease and line your cake tin or loaf tin

Measure the flour, sugar and butter into the mixing bowl

Crack the eggs in one at a time, watching out for egg shell

Whisk with a mixer or stir with the wooden spoon until the mixture is light in colour

Peel and mash the banana in the small bowl with a fork

Stir the banana into the cake mixture

Pour into the cake tin
-
Cook in the oven 18 - 20 minutes for a cake tin or 20-30 minutes for the loaf tin

When the cake is cooked remove from the oven

If you are using chocolate put them straight onto the cake now, see picture below. The heat from the cake will melt the chocolate and then you can spread it with a spoon.
