Bolognese and Pasta

This family favourite is a must have in your cookery book. In this recipe we use beef mince but you could make it with beef and pork mince or change it to Quorn or soya mince.

Ingredients​

  • 1 Onion

  • 1 tbsp Oil

  • 500g Minced beef

  • 1 tsp Garlic paste

  • 1 pack of Passata

  • 1 large Carrot

  • 1 tsp Oregano

  • Salt and pepper to taste

 

For the Pasta

  • 100g 00 flour (pasta flour)

  • 1 egg

What do we need?

  • Teaspoon

  • Tablespoon

  • Saucepan

  • Wooden spoon or spatula to stir

  • Sharp knife

  • Chopping board

  • Grater

  •  

  • Bowl

  • Fork

  • Weighing scales

  • Pasta machine or rolling pin

Tia's tip

​

You need to knead the dough for a long time to ensure that its really smooth.

What do we do?

  • Chop the onion into small cubes. The easiest way is to put half an onion flat side down on the chopping board. Cut from the root outwards (do not cut through the root) then cut across the onion the other way

  • Put the onion and oil into the saucepan with the oil, cook for two minutes

  • Add the garlic paste and cook for a further minute

  • Add the mince, try to break it up as you add it to the saucepan

  • Cook until the mince is brown, this will take 3- 4 minutes

  • Grate the carrot

  • Add the passata, oregano and grated carrot to the saucepan. Put the lid on and leave to simmer for 15-20 minutes. If you have time you can simmer for longer, you may need to add a little water if it gets too dry.

  • When you are ready to serve add salt and pepper to taste.

 

To make the pasta

  • Measure out the flour into a large bowl

  • Make a hole in the middle of the flour and crack the egg into the centre

  • Stir in the flour and mix together until you have a dough

  • Knead the dough until smooth. Wrap in cling film and leave to rest for an hour

 

When you are ready to cook the pasta

  • If you have a pasta machine, roll out until thin and then cut into long strips

  • You can also roll the pasta with a rolling pin, the thinner the better. Then cut into long strips

  • Cook in a saucepan of boiling water for 3-4 minutes or until tender
