Bruschetta

Bruschetta is a traditional Italian starter. Made with grilled bread rubbed with garlic and drizzled with Olive oil. The most well know topping is tomato, basil maybe with a drizzle of balsamic vinegar. This version uses avocado with bacon and tomatoes. 

Ingredients​

  • 5 slices of Ciabatta – although you can also use French stick or a sourdough loaf

  • Avocado

  • 3 slices of bacon

  • 3 tomatoes

  • 10 Basil leaves

  • 1 garlic clove

  • Olive oil

What do we need?

  • Two small mixing bowls

  • Fork

  • Tablespoon

  • Teaspoon

  • Sharp knife

  • Chopping board

  • Scissors

  • Cup

This is nice with mozzarella and tomatoes as well.

What do we do?

  • Heat oven to 200oC

  • Cut slices of the bread and drizzle with olive oil

  • Bake for 8-10 minutes until golden and crispy

  • Cut the garlic clove in half and rub it on your piece of toasted bread

  • Cut the bacon into small pieces using scissors and cook in a frying pan until cooked through. Should take 3-4 minutes

  • Cut the tomatoes into eight pieces. The best way is to cut into quarters and then cut each quarter in half horizontally

  • Cut the avocado in half and remove the large stone from the centre

  • Spoon the avocado flesh from the skin and put it into one of the small bowls 

  • Use the fork to mash the avocado 

  • Cut the basil leaves by placing them into a cup and using the scissors to chop into small pieces

  • Mix the basil and tomatoes in the second small bowl

  • Take the piece of bread and spread some of the mashed avocado on top

  • Add some of the tomato and basil salad and then sprinkle with bacon
