Cheese and Ham pancake bake

Everyone loves a pancake on Pancake Day and we love all the sweet toppings. In our house we like savoury pancakes too and this recipe makes them into a full meal. It is great fun to make with children. For a family meal you could serve it with salad or your favourite vegetables.

Ingredients​​ (serves four)

For the pancakes​

  • 140g/5oz plain flour

  • 2 eggs

  • 350mls milk

  • Oil or butter to cook

 

For the bake

  • 12 slices of thin Ham 

  • or 4 Tbsp Pesto if you would like a vegetarian version.

  • 130g Spinach, cooked and drained

  • 200g Grated Cheese

  • 200ml Half fat Crème Fraiche

  • 3 spring onions

  • ½ Tsp Salt

  • ½ Tsp Pepper

What do we need?

  • Pancake pan / Frying pan

  • 2 Small mixing bowls

  • Whisk

  • Tablespoon

  • Measuring jug

  • Large rectangle Oven proof dish

  • Tablespoon

  • Grater

  • Cup

  • Scissors

Tia's tip

​

You can use a spoon or ladle to add the batter or put the pancake batter into a jug to help you pour it.

What do we do?

To make the pancakes (recipe should make 8)

  • Put the flour into the bowl. 

  • Crack the eggs into the bowl, making sure you do not get any shell in there. Add to the bowl when you are happy it is shell free. 

  • Add half the milk and whisk the mixture, until it is a smooth paste.

  • Gradually add the rest of the milk, whisking as you go. 

  • You need the pancake batter to be the consistency of double cream.

  • If you have time, leave the batter to rest for 30 minutes.

  • To cook the pancakes put your pancake or frying pan on the stove on a medium heat.

  • Once the pan is heated add a little cooking oil or butter and add the batter. You need to move the batter quickly around the pan, so that it covers the pan. 

  • Cook the pancake for 1 minute on each side.

  • Once you have cooked the first pancake repeat steps 7- 9 until all of the batter is finished.

Making the pancake bake

  • Put 25g of cheese to one side to use later.

  • Put the oven onto 200c/180c fan/ gas mark 6. 

  • Use some butter to grease a large oven proof dish

  • Take one pancake and scatter over some ham or pesto, spinach and cheese.

  • Roll it up and put it into the dish. 

  • Repeat steps 4-5 until all the pancakes have been filled.

  • Put the crème fraiche, remaining cheese, Salt, Pepper and spring onion into the second bowl and stir well. 

  • Spread the topping on the pancakes

  • Put the whole dish in the oven and bake for 20 minutes.
