Ingredients​ (serves four)

4 Chicken Escalope

2 eggs

125g Panko Breadcrumbs

50g Parmesan Cheese, grated

3 Tbsp Plain Flour
-
Salt and Pepper
-
Oil for cooking

What do we need?

Three small bowls
-
Chopping board
-
Weighing scales
-
Sharp Knife
-
Tablespoon
-
Fork
-
Teaspoon

Frying pan or Baking Tray

Spatula

If you cannot get Panko breadcrumbs toast some bread and pop in a food processor to make into crumbs
What do we do?

Mix the breadcrumbs and grated parmesan in one of the small bowls and season with salt and pepper

Crack the eggs into one of the small bowls and whisk with a fork
-
Put the flour into the third bowl
-
Put each chicken escalope on the chopping board and cut in half so you have 8 pieces in total.

Dip a piece of the chicken in the flour
-
Then dip in the egg
-
Finally put it in the breadcrumbs and coat the chicken both sides,

Repeat steps 5-7 with the other chicken portions.

Place a frying pan over a medium heat
-
Place a little oil in the pan and add three pieces of the breaded chicken
-
Cook for 5 -7mins, turning over half way
-
Remove from the pan checking the chicken is cooked all the way through
-
Keep the chicken warm, while you repeat steps 10-12 for the other pieces of breaded chicken
If you would rather cook them in the oven
-
Put the oven on 200c
-
After step no. 8 above put the coated chicken pieces on a baking tray and put them in the oven for 10-15 minutes

Make sure that they are cooked all the way through before serving
To Serve
-
Cut the bread roll in half
-
Spread the roll with a sauce of your choice
-
Add two pieces of cooked chicken along with any salad or cheese
-
Serve and enjoy!
