Courgette and cheese fritters

These fritters are so delicious that the children will not even realise that they have vegetables in. They are supper easy to make and can be eaten hot or cold.

Ingredients​​

  • 1 large Courgette

  • 2 eggs

  • 50g grated Cheddar Cheese

  • 100g Plain Flour

  • ½ Tsp Salt/ Pepper

  • 2 Tbsp Vegetable Oil

 

Sour cream and chive dip

  • 75g Sour Cream

  • 6-8 Chives

  • Pinch of Salt and Pepper

What do we need?

  • Chopping board
    Grater
    Frying pan

  • Tablespoon
    Teaspoon 

  • One medium-mixing bowl
    One large mixing bowl
    One small mixing bowl
    Cup 

  • Scissors

Tia's tip

​

It is easier to use a clean tea towel to squeeze the water out of the courgettes, rather than kitchen roll 

What do we do?

  • Grate the courgette and then put it into 2-3 sheets of kitchen roll and then squeeze it over the medium bowl to remove the water from the courgette. Then put it squeezed courgette into the big bowl. The kitchen roll can go int the bin.

  • Grate the cheese and add to the big bowl with the eggs

  • Mix well and then add the flour and salt and gently combine.

  • Put a little of the oil into the frying pan. Put in on a medium heat. 

  • Drop one heaped tablespoon of courgette mixture into the pan. This will make one fritter. Depending on the size of your pan you may be able to cook 2 or 3 at the same time. 

  • Cook the fritters for 2 minutes and then turn over and cook for another 2 minutes. They should be golden brown

  • Repeat steps 5 & 6 until all of the mixture is used up. Add more oil to the pan if needed.

  • Cut the chives in the cup using the scissors.

  • Put the sour cream and chives in the small bowl and stir in the salt and pepper. 

  • Serve the fritters with the dip
