Eve's pudding

In the cold weather it is so nice to have a warm comforting pudding. Eve’s pudding combines apple and sponge. Using cooking apples means that the apples break down a little and also provide a little tang to a sweet dish.

Ingredients​​ (serves 4)

  • 2 large cooking apples (

  • 1 Tbsp lemon juice

  • 20g/¾oz butter

  • 2 Tbsp caster sugar

For the topping

  • 75g/3oz butter

  • 100g/3½oz caster sugar

  • 100g/3½oz self-raising flour

  • 2 free-range eggs, lightly beaten

  • 1 Tbsp boiling water

What do we need?

  • Chopping board

  • Sharp knife

  • Saucepan

  • Wooden spoon

  • Weighing scales 

  • Tablespoon

  • Teaspoon

  • Oven proof dish (needs to be at least 5cm deep)

Tia's tip

I love this pudding with custard but it would also be nice on its own or with ice cream!

What do we do?

  • Preheat the oven to 180C/160C Fan/Gas 4.

 

  • Peel the cooking apples and cut into four pieces. Remove the core and then cut the pieces into smaller pieces. Each quarter should be cut into 8-10 pieces.

  •  Put the apples in the saucepan. Add the lemon juice and 2 Tbsp water. Put the lid on and cook the apples for 5 mins. They need to be softened.

  • When cooked add the butter and caster sugar to the apples and give them a good stir. T

  •  Put the apples into your oven proof dish. 

  •  For the sponge, put the butter and sugar into a bowl and mix them together with a wooden spoon or electric mixer. It should turn lighter in colour.

  •  Carefully add the flour and eggs. Stir gently at this point to try and keep the mixture fluffy. Add 1Tbsp to the mixture and stir again. 

  •  Put the sponge mixture on top of the apple mixture.

  •  Put the pudding in the oven and cook for 30-35 minutes.
