Italian Couscous Salad

Trying to make a filling salad can be a challenge. My children are not keen on couscous because the small couscous can have the texture of sand. They loved this large couscous because it tasted a bit like pasta.

Ingredients​​ (side dish for 4 people)

  • 150g Giant plain couscous

  • 2 Tomatoes

  • 1 Red Pepper, roasted

  • 1/3 Cucumber

For the dressing

  • 1 large Orange juice

  • 1 Tbsp Balsamic Vinegar

  • 1 Tbsp Honey

  • 1 Tbsp Olive Oil

  • Pinch of salt and pepper

What do we need?

  • Chopping Board

  • Paring Knife

  • Baking tray

  • 1 large Mixing Bowl

  • 1 small Mixing Bowl

  • Fork

  • Tablespoon

  • Teaspoon

  • Cup

  • Scissors

To continue the Italian theme, we kept it to red, green and white, but you can add whatever vegetables you like.

What do we do?

  • Prepare the couscous as per the instructions on the packet. When it is ready put the couscous into the large bowl.

  • To roast the peppers – Put the oven on 200c or 180c Fan. Cut the pepper in half and remove the seeds, then cut it into quarters. Rub each piece with a little olive oil and put them on the baking tray. Cook for 15 minutes. Take them from the oven and put in a freezer bag. Seal the bag and let them cool. Once cooled you should be able to remove the skin.

  • When ready cut the pepper into squares and add to the big bowl.

  • Cut the tomatoes into 16 pieces and add to the big bowl.

  • Cut the cucumber in half lengthways. Use a teaspoon to scoop out the seeds.

  • Once de-seeded cut the cucumber into small pieces and add them to the big bowl.

  • Cut the orange in half and squeeze all of the juice into the small bowl.

  • Get a fork and start mixing the juice while someone else adds the oil and honey. Add a little salt and pepper if you like it.

  • Add the dressing to the big bowl and stir all of the ingredients well.
