Mango and Banana Cheesecake

This is a fun way to introduce children to Cheesecake. They can get involved at every stage; bashing the biscuits, stirring up the cheesecake mix and building their own pots. We chose mango and banana as they give the cheesecake a tropical feel.

Ingredients​​ (makes 5)

  • 8 Digestive biscuits

  • 50g Butter, melted

  • 250g Mascarpone (or Cream cheese) 

  • 1 Lemon

  • 3 Tbsp Icing sugar

  • 1 banana

​

  • For the topping ½ mango

What do we need?

​

  • Two medium mixing bowls

  • Strong food bag

  • Rolling pin

  • Table knife

  • Chopping board

  • Weighing scales

  • Tablespoons

  • Teaspoons

  • 5 small glasses or clear plastic cups

This recipe is also nice if your replace the banana with strawberry jam and the mango with strawberry slices.

What do we do?

  • Put the biscuits into the food bag. Secure the top of the bag, being careful to take the air out as we don’t want them to go pop!

  • Take your rolling pin and bash the biscuits in the bag with your rolling pin. 

  • Tip the biscuit crumbs into one of the bowls.

  • Add the melted butter and use one of the tablespoons to stir it well.

  • Peel the banana and chop into pieces. Put the pieces into the second bowl.

  • Use the fork to mash the banana

  • Add the mascarpone cheese, and icing sugar to the banana.

  • Cut the lemon in half and squeeze all of the juice into the cheese mixture bowl. If any pips sneak in use one of the teaspoons to get them out.

  • Use one of the tablespoons to stir the cheese mixture really well.

  • Cut the mango into long fingers. Carefully remove the skin. Then cut each finger into small cubes.

 

Finishing the dish

  • Use the teaspoons or tablespoons to put a little biscuit in your cup, add cheese mixture. Then put another layer of biscuit and then cheese mixture. 

  • Top the cheesecake pots with your mango pieces
